Day 8

Past a week, whew! 

Breakfast was fast and easy, a full blown veggie and fruit smoothie. 

Recipe for two:
1 celery stalk
1 apple, peeled
1 cup of baby spinach, raw
1/4 cup frozen raspberries
1 frozen banana
1/3 cup of water
Blend till smooth and enjoy!

Mid morning I had a delicious orange and John had a banana.

For lunch, I went out to Salsa Fresca in Yorktown.  I customized my own Paleo salad. Lettuce, chicken, grilled onions and peppers, pico, cilantro and tomatilla sauce. Cilantro lime dressing on the side. And if your going to ask, I decline on the chips! Go me, no temptation there. Also, the salad was delicious so my Mexican craving was fulfilled!

John is so fortunate that his job provides lunch for all the students and staff, but it's not always easy to get what you need or can have. Lucky for him, today's meal was Asian themed with lots of great options. He had the chicken and veggies stir fry, no rice! Along with that, sautéed eggplant and an Asian soup, light colored broth is good to stick with! I'm very proud that he's making these great choices.

For dinner I made a totally Paleo meal, Cuban Picadillo see link to the recipe below. This reminds me of a mix between sloppy joe and chilli. Next time, I won't add as much tomato paste, other then that, tasty!
