I took a bag of steamed cauliflower and microwaved for 5 mins. I then put it in the food processor with a little salt and pepper and pulsed it about 5 times. When I scooped it out, to my surprise, it really did look like rice. I scooped it onto our plates and topped with my chicken Marsala. (See day 6 for recipe and pic.)
The real test would be what the tough critic, my husband, John had to say; he loves his rice! I was shocked to see his delight as he took several bites!
We've decided we will certainly make this again. I imagine you could get bored with it real quick, so we'll probably only make it once a week or so, and definitely with meals that have a sauce, just to mask the cauliflower taste.
Update: some variations we've made is adding cilantro and lime to it, we pared this with a chipotle lime salmon. We've also used the rice cauliflower to make pizza. See later post about trying new things!!
